Named for the red, green and yellow bell peppers that bring vibrant color to the dish, this Rasta pasta is a play on the classic penne alfredo you know and love. In this version I’m using chicken breast as the protein, but the chicken could easily be replaced with shrimp, or a piece of salmon on top, or just enjoy the pasta, alfredo sauce and bell peppers if you’re vegetarian! I’ve done all of the above. As a matter of fact, when I make this Rasta pasta for a crowd, like a birthday party, I usually make it without meat to please all guests and avoid any potential allergies.

We’ve all been to the chain hotels for weddings, anniversary parties, balls and what not and had the dry stuffed chicken breast and too-pink-on-the-inside-for-me steak. But, whenever the salmon in lemon cream sauce was on the menu, my stomach did a happy dance. It wasn’t perfect but it was always my favorite of the chicken, beef or fish trio. So I set out to do 2 things. 1 – Make it myself, so I can have salmon in lemon cream sauce whenever I want, and 2 – make it better than when it sits on a buffet for an hour before I get to it.

Cornmeal porridge is a Caribbean breakfast staple that brings childhood memories rushing back every single time I have it. It was one of those things that when you learned it was on the stove you jumped for joy. If you’re not familiar with it, think of the best bowl of cream of wheat you’ve ever had with a bit cornbread flavor and a note of warm spices like cinnamon and nutmeg. It’s a velvety smooth bowl of comfort food I’m so glad my aunt passed on to me, because I could eat every day. Holidays and family gatherings aren’t enough. It’s a great dish for babies and kids too, just cool it to the appropriate temperature for their little palettes.

As I think about the first time I set out to make chili, I’m realizing I might have a bit of an “anything you can do, I can do” complex. When my husband likes a dish, whether from his childhood or a restaurant we frequent, I feel compelled to give it a shot. Test myself to see if I can recreate it or better yet, best it!
