Do you love fried rice but want a healthier version? Well come on and make some Cauliflower fried rice with me! I know you’re saying to yourself cauliflower, how is that going to taste like rice? Or you’re thinking that it doesn’t even look like rice but trust me it’s going to be delicious and healthy.

Cook time 10 minutes
Serves three

Ingredients

  • One head of cauliflower
  • ½ cup of frozen mixed vegetables
  • 2 scallion stalks
  • Half of an onion
  • 2 tablespoons sesame seed oil
  • 2 tablespoons low sodium soy sauce
  • 3 cloves of garlic
  • black pepper
  • salt

Directions

  • Chop cauliflower into chunks you will need a food processor or blender on grating setting.
  • Dice your onions and scallions, you can put the onion in the food processor.
  • Mince garlic
  • On high heat add 2 tablespoon of sesame oil
  • Add the cauliflower, scallions, frozen mixed vegetables, and onion.
  • Combine and stir making sure all ingredients are getting coated.
  • Once the cauliflower is tender add in the garlic and season the pan with salt, black pepper, and soy sauce.
  • Stir and taste for your preference of salt.

You can use a wok or large skillet to prepare this recipe. I make my cauliflower fried rice with chicken or shrimp so get creative. Make a salad, add avocado to the side. If you like heat you can add some hot sauce or sweet chili sauce for that kick of spice. Plate the rice and garnish it with some scallion on the top and enjoy!
