Curry Coconut Jackfruit
On my journey of trying to find a healthier option, I decided to try jackfruit to eliminate chicken from my diet. Jackfruit has almost the same consistency as meat when it’s cooked and is high in Vitamin A. Jackfruit also acts like an antioxidant and helps with the prevention of diseases in the body.
Marinating Ingredients
1 onion, chopped
1/8 cup garlic, chopped finely
1 whole habanaro
4 Tbsp curry powder
1 tsp cumin powder
1/2 tsp turmeric
1/2 tsp garam masala powder
3 Tbsp green seasoning
3-4 Tbsp oil
2 cans of Jackfruit chunks
½ cup of coconut milk
Salt to taste
Marination ingredients
1 onion, chopped
1/8 cup garlic, chopped finely

1/2 tsp turmeric
1/2 tsp garam masala powder
3 Tbsp green seasoning
Instructions
Mix the Jackfruit with all the marination ingredients and marinate for a couple of 2 to 3 hrs. Heat oil over medium high heat and stir in onion, garlic, curry powder, cumin, turmeric and sauté till onion gets soft and starts getting golden brown.
Add in mixed spices and jackfruit stir continuously for a couple of minutes. Add in 1/4 cup of water and cover the pot for 2 minutes.
Mix well and cook covered for ten minutes, the Jackfruit will begin to cook and look amazing. Stir and cook for an additional 5-8 minutes. Add one cup of water and half cup of coconut milk along with whole uncut habanero, salt, green seasoning and cook covered till the jackfruit is tender.
