So first things first! I’m clearly not Jamaican, so I don’t need anybody telling me this isn’t “authentic” Jamaican Brown Stew Chicken ok??? Ok! Lol
I found this recipe a few years ago and it was perfect to me. The gravy is sweet with hint of spice and the chicken is tender and juicy! Im not that good at making rice and peas yet but pairing it with white rice turns out just as good!

INGREDIENTS:⠀

4 Chicken thighs (I took the skin off mine) ⠀

Salt⠀
-
Pepper⠀
-
Garlic Powder
-
Onion Powder
-
Jamaican All Purpose seasoning ⠀⠀
-
Jamaican Allspice ⠀
-
Paprika
-
1 onion ⠀
-
1 green pepper ⠀
-
1 red pepper ⠀
-
Fresh Thyme
-
3 scallions ⠀
-
3 garlic cloves
-
3 tbsp brown sugar ⠀
-
1/4 c vegetable oil ⠀
-
1/4 c ketchup ⠀
-
1 c water⠀⠀
-
1 tsp browning sauce ⠀⠀

Hot pepper sauce ⠀
DIRECTIONS:⠀

In a large bowl Season chicken and add in all veggies and herbs on top. ⠀

Mix to combine and cover. Let marinate 1 hour – overnight.⠀⠀

Heat oil in pan over medium heat.⠀

Add in chicken and brown each side. 5-7 mins.⠀

Remove chicken and drain oil.⠀

Add chicken back to pan. ⠀

Add all seasonings from bowl into pan⠀
-
Add water, ketchup, browning and brown sugar ⠀

Bring to a boil⠀

Reduce heat, cover and simmer about 25 mins ⠀
