This recipe is one of those things that you make and say “that was easy, and so much more fresh and flavorful” than say that solid can of gelatin you slide onto a plate.
It takes no time, and only a couple of ingredients, and is so worth the outcome.
Even if the stuff in a can brings back childhood nostalgia, give this a try, you won’t regret it.
Ingredients:
1 12-oz bag of fresh cranberries, washed and dried
2 Cups Granulated Sugar
2 Tablespoons Water
1 orange, zested and juiced
A Pinch of Salt (to taste)
Directions:
Place all but ½ a cup of your cranberries onto a saucepan.
Add 1 cup of granulated sugar, 1 large strip of orange zest and 2 tablespoons of water. Stir to combine and cook over low heat for about 10minutes, stirring periodically to allow the sugar to dissolve and the cranberries to soften.
Add the juice of half an orange and increase the heat to medium.
Stir to combine and simmer about 10-15 minutes until the cranberries burst.
Reduce the heat to low and add 1/2cup to 1 cup additional sugar and a pinch of salt to taste.
Transfer to a serving bowl, top with 1/4tsp orange zest, and cool to room temperature before serving.
