Hey Mommies! I’m back with a delicious Southwest Fajita Bowl ! The best part about this meal is its versatility! You can add a variety of different veggies, pair it with rice or on a bed of spinach for a yummy southwest salad or even turn it into a wrap! Its definitely one of those meals you can be creative as you want with. Spice it up in your own way! This bowl is a combination of marinated fajita chicken on top of a bed of cilantro lime rice with black beans, southwest chipotle corn and pico de gallo! Theres much flavor in this dish Im sure it’ll be a hit! Don’t forget to add a nice cilantro lime ranch drizzle for that extra pop!

INGREDIENTS (in order of video)
Pico De Gallo
- 3-4 Tomatoes
- 1/2 of a Small Red Onion
- 1 Jalapeno
- Cilantro
- Fresh Lime Juice
- Adobo Season
- Pepper
Southwest Corn
- Fresh or Frozen Corn
- 1/2 Red Pepper
- 1/2 Green Pepper
- 1/2 Onion
- 1 Tbsp Minced Garlic
- 4 Tbsp Butter
- Mrs. Dash Southwest Fajita Seasoning
- Garlic Powder
- Salt
- Pepper
Cilantro Lime Rice
- 1 Cup Rice
- 2 Cups Chicken Broth
- 2 Tbsp Oil
- 1/2 lime or 3 Tbsp Lime Juice
- Cilantro
Black Beans
- 8 oz can Goya Black Beans
- 1 tsp of any taco seasoning packet
- 1/2 tsp Cumin
- 1/2 tsp Oregano
- 1/2 tsp Onion Powder
- 1 bay leaf
- 1/2 lime
- Salt to taste
Marinated Fajita Chicken
- 2 Chicken Breast
- 1/2 Green Pepper
- 1/2 Red Pepper
- 1/2 Yellow Pepper
- 1/2 Onion
Fajita Seasoning
- 2 Tbsp Chili Powder
- 1 Tbsp Paprika
- 1 Tbsp Sea Salt
- 1 Tbsp Cumin
- 1 Tbsp Oregano
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Black Pepper
- 1/4 tsp Mrs. Dash Southwest Seasoning
Marinade
- 1/2 Lime
- 2-3 Tbsp Fajita Seasoning
- 1/3 Cup Oil
Directions
Pico De Gallo
Dice tomatoes, onions, jalapeno and chop up cilantro.
Add all ingredients to medium bowl. Mix and season to taste.
Southwest Chipotle Corn
Dice up all veggies.
Melt butter in heated pan.
Add in peppers and onion. Saute 3-4 mins.
Add in minced garlic and saute 1 additional min.
Pour cooked corn into pan with veggies and mix until well combined.
Season with Adobo, Garlic Powder, Pepper and Southwest Seasoning. Then mix again.
Sprinkle Chipotle Season on top. Cover and set aside.
Cilantro Lime Rice
Heat up 2 Tbsp oil on medium heat.
Add rice to pan and keep stirring until rice begins to brown.
Once rice has browned, pour in 2 cups of chicken broth, lime juice and season with Adobo.
Bring broth to a boil, cover then turn to medium low heat and let simmer 15 mins.
Once rice is soft and fluffy gently mix in cilantro.
Black Beans
Add the black beans with liquid to a pot on medium high heat.
Stir in all remaining ingredients.
Bring beans to a boil, stirring frequently then reduce heat to low.
Cover and let simmer for 15-20 minutes.
Once beans are ready squeeze in 1/2 lime juice.
Marinated Fajita Chicken
Combine all seasoning ingredients in a small bowl and mix well.
Place chicken breasts in a large ziplock bag or bowl.
Pour in 2-3 Tbsp of Fajita Seasoning.
Pour in all marinade ingredients.
Shake until chicken is evenly coated and marinate 30 mins or longer.
Preheat a pan with 2 tbsp oil
Add in chicken breasts with a bit of the marinade as well
Sear breasts until browned on both sides.
Once breasts are fully cooked remove from pan.
Add peppers and onion to pan and saute 5-7 mins.
Once peppers are sautéed remove from pan.
Assemble bowl, salad or wrap and Enjoy!! 🙂
